Grilled Mexican Corn with Chilli Mayo

A delicious healthy dish starring our Chilli Mayonnaise. Easy to make, but yummy to taste, this corn side dish is sure to impress!


4 corn on the cob
1 tbsp olive oil
3 tbsp chilli mayonnaise
2 tbsp lime juice
1/4 tsp cumin
Coriander, to garnish


  1. Heat grill to a medium heat. Cover corn in oil until evenly coated & place on a baking sheet.
  2. In a separate bowl, stir together mayonnaise, lime juice & cumin. Season with salt & pepper to taste.
  3. Place the corn under the grill and cook until it begins to blacken and rotate. Repeat until blackened on all sides.
  4. Slather the mayo mix on corn, garnish with a squeeze of lime & coriander.
