15 Minute Creamy Chipotle Sausage Gnocchi

Get the most delicious dinner on the table in 15 minutes. Dr. Will's Chipotle Ranch Dressing does all the heavy lifting here as it creates a velvety, flavour-loaded sauce with just the right balance of creamy richness, chipotle heat, and herby tang. It's got that addictive ranch flavour, but with a bold smoky kick that makes every bite pop. High quality sausages (with no nasty additives) are cooked off until golden, with garlic and onion for depth, then let the gnocchi soak up all the spicy, saucy goodness. We're using kale here, but you can swap in for your preferred greens - spinach or cavolo nero would also be delicious. Perfect for busy weeknights, but tasty enough to feel like a treat. 

INGREDIENTS:
Your preferred cooking oil or spray
400g sausages
2 garlic cloves, finely chopped
100g kale, finely chopped
300g frozen mixed peppers
500g gnocchi
60ml Dr. Will's Chipotle Ranch Dressing
3 tbsp creme fraiche
Salt & pepper, to taste

METHOD:

  1. Cook the sausages & vegetables 

    • Boil a kettle of water for the gnocchi. 

    • Heat a dash of your preferred cooking oil or spray  in a large frying pan over a medium heat. Remove the sausage skins, crumble the sausage meat into the pan, and cook for 4–5 minutes until golden and caramelised.

    • Peel and chop the garlic, finely chop the kale, unless it’s chopped already. 

    • Add the garlic, kale and frozen peppers to the pan and cook for 3 minutes, until the kale wilts down. 

    • Adjust the seasoning to taste.  

  2. Cook the gnocchi 

    • While the sausages are cooking, add the gnocchi to a large heatproof bowl and pour over the boiling water. After  2–3 minutes, drain the gnocchi.

  3. Finish the dish & Plate Up

    • Tip in the gnocchi, and Dr. Will’s Chipotle Ranch Dressing with the crème fraîche.  Mix everything together vigorously then add 150 ml water. Simmer gently for 2 minutes until the sauce is glossy. Season to taste.

    • Spoon into bowls and serve straight away.
