All-in-One Garlic Parmesan Chicken with Bagel Croutons

Juicy chicken with a golden, herby Parmesan and breadcrumb crust. Roasted all in one tray, chunky bagel croutons sit underneath to soak up every bit of the garlicky flavour, savoury juices and crispy goodness from the chicken as it cooks. We’re using Dr. Will;s Olive Oil Mayo to coat the chicken - it’s an excellent way to use the mayo to help keep the chicken succulent as it cooks, plus adds more flavour. The vinegar breaks down the chicken’s muscle fibres which helps keep it tender, while the fat from the oil and egg yolk provides a protective layer to keep it juicy. Alongside the chicken, a colourful mix of courgette and sweet cherry tomatoes with creamy butter beans, roasts until tender and caramelised. The result is an easy, flavour-packed dinner with minimal washing up. It's a fresh, summery twist on a classic roast that feels special enough for entertaining but simple enough for a weeknight.
INGREDIENTS (serves 4):
2 bagels, chopped
2 courgettes, chopped
200g cherry tomatoes
400g butter beans, drained
4 chicken breasts
3 tbsp Dr. Will’s Olive Oil Mayo
2 tsp garlic granules
2 tsp dried mixed herbs
60g grated Parmesan
2 tbsp panko breadcrumbs
Small handful fresh basil, leaves picked
Your preferred cooking oil or spray
Salt & pepper, to taste
METHOD:
- Preheat the oven to 190C/170C fan. You will need a large baking dish.
- Chop the bagels into small bite-sized pieces - add them to the baking dish, drizzle with oil and toss together.
- Chop the courgette into rounds, around the thickness of a £1 coin. Scatter the courgette and cherry tomatoes (no need to chop them) on top of the bagel croutons.
- Scatter over the drained butter beans. You can add another drizzle of oil and season with salt and pepper.
- Mix together the Dr. Will’s Olive Oil Mayo, garlic granules, dried mixed herbs, grated Parmesan and a pinch of black pepper(the Parmesan adds salt so you may not need to add more).
- Flatten each chicken breast lightly by bashing with a rolling pin or another heavy object.
- Spread the mayo mixture over the chicken breasts, pressing down so they are fully coated, then sprinkle over the breadcrumbs. Pop the chicken on top of the veg mix.
- Bake the traybake for 25 - 30 minutes, until the chicken is cooked through.
- Plate up the chicken and veg with beans. We love to drizzle some balsamic vinegar on top of the veg for a tangy kick to cut through the Parm. Scatter the fresh basil on top then tuck in and enjoy!
