Speedy bacon ranch pasta for dinner? Yes please. Ranch is having a serious moment this year, and we’re showing off a special Dr. Will’s spin, that’s rich, tangy, and packed with flavour, all from a minimal list of ingredients. By letting the mayo do the heavy lifting, we get a perfectly smooth delicious sauce, without any fuss, meaning less prep and more taste. For a lighter version were using lighter crème fraîche instead of buttermilk. This pasta comes together in no time, making it the ultimate speedy dinner for busy nights, and perfect for easy lunches too as we come into the summer months (it also ticks the meal prep box). If you fancy a smoky hit to your ranch pasta, you could use Dr. Will’s Chipotle Ranch Dressing instead for an easy win.

INGREDIENTS (serves 4):
300g farfalle pasta
6 smoked streaky rashers, chopped
1 red onion, chopped
1 red pepper, chopped
3 tbsp Dr. Will’s Avocado Oil Mayo
80ml lighter crème fraîche
1 tsp garlic granules
1 tsp onion granules
1 tsp dried dill
½ lemon, juice
1 handful fresh flat leaf parsley, chopped
Your preferred cooking oil/spray
Salt & pepper, to taste

METHOD:

  1. Cook the farfalle pasta according to the packet instructions, in boiling, salted water. Before you drain the pasta, reserve a mug of the cooking water for the sauce.
  2. Chop the streaky bacon into lardon sized pieces. Chop the red onion and red pepper.
  3. Heat a dash of oil in a frying pan over a medium heat and cook the bacon until golden and crispy. Remove with a slotted spoon and set aside, leaving a little bacon fat in the pan, for cooking the veg.
  4. Add the red pepper and onion and cook for 4–5 minutes until softened.
  5. Make the ranch by mixing together Dr. Will’s Avocado Oil Mayo, lighter crème fraîche, garlic granules, onion granules and dried dill. Juice the lemon and add half the lemon juice to taste - adding more if you like. Season with salt and pepper.
  6. Chop the fresh parsley. Add the drained pasta to the red pepper and onion, then toss in the crispy bacon and drizzle over the creamy ranch. Mix well, adding a splash of reserved pasta cooking water if needed to loosen the sauce. Check the seasoning and adjust to taste.
  7. Divide into bowls, then sprinkle over the fresh parsley. Tuck in and enjoy!
