Crispy Chicken Caesar Ciabatta

This Chicken Caesar Ciabatta is all about big flavour with minimal effort. Dr. Will’s Avocado Oil Mayo is turned into a silky, cheat’s Caesar-style dressing, that has the perfect tangy kick. Our gorgeous dressing provides the main flavour profile, coating crispy, tender chicken served alongside crisp greens for a fresh, satisfying bite, in a golden ciabatta. Adding another layer to the sandwich, marinated courgette ribbons are paired with fresh lemon and a sprinkle of nigella seeds for crunch. Packed with protein and fibre, this ciabatta is a great option for an easy lunch or relaxed dinner, and the filling can be prepped ahead to make busy days even simpler. Classic, comforting, and effortlessly good.

INGREDIENTS (serves 2):
1 chicken breast
1/2 egg beaten
1/2 lemon, zest & juice
1 courgette
2 tbsp Dr. Will's Avocado Oil Mayo
20g parmesan, grated
1/2 little gem lettuce
2 ciabatta roll
1 tbsp plain flour
30g panko breadcrumbs
1 tsp nigella seeds
1/2 tsp Dijon mustard
1/2 tbsp Worcester sauce

METHOD:

  1. Slice chicken breast into 2 pieces, lengthways. Add the plain flour to one bowl with a pinch of salt & pepper, the beaten egg to another & the panko breadcrumbs to a third. 
  2. Dip each piece of chicken into flour, then egg & finally breadcrumbs.
  3. Preheat the air fryer to 200°c. Spray the chicken lightly with cooking oil & air fry for 12-15 minutes, flipping halfway through.
  4. With a peeler, thinly slice the courgette into long strips. Add to a bowl, drizzle generously with your favourite oil, add lemon zest, half the juice, nigella seeds & season to taste. Mix well to help marinate the courgettes.
  5. While the chicken cooks, add Dr. Will's Avocado Oil Mayo with other half of lemon juice, parmesan, Dijon mustard & Worcester sauce until smooth & silky.
  6. Thinly slice the lettuce & toss with the dressing until well coated.
  7. Slice the ciabatta in half & toast until golden brown. Fill each ciabatta with lettuce, chicken & courgette.
