Introducing our Spicy Tomato Rice made in collaboration with Nice Rice. INGREDIENTS: 4 rashers streaky bacon, chopped ½ onion 1 tsp garlic 1 yellow pepper 1 pack Nice Rice Chipotle Rice 400g tin chopped tomatoes ½ chicken stock cube, made up to 200ml 1 red chilli, sliced 2 tbsp Dr. Will's Tomato Ketchup Handful of coriander, chopped METHOD: Fry bacon in a pan with a little oil until crispy & set aside. Add onion, pepper & garlic to pan and cook until softened. Add pack of rice to pan, with 2 tbsp of tomato ketchup and fry for at least 2-3 minutes. Add tin of chopped tomatoes along with stock. Cook for 10-15 minutes or until liquid is reduced. Add cooked bacon back to pan & garnish with chilli and coriander.
