Dr. Will's x PUNCH: Sweet Potato & Kale Salad

A collaborative dish with our friends at PUNCH.

Ingredients:

  • 1 medium sweet potato
  • 1 red onion
  • 150g kale
  • 250g cooked quinoa
  • 1 tsp mixed herb seasoning
  • 1 tbsp extra virgin olive oil for roasting + 1 tsp for kale
  • Dr. Will's Green Goddess Dressing

Method:

  1. Pre-heat your fan oven to 180 degrees.
  2. Cut your sweet potato into round discs, cutting any larger discs into half moons if they’re too big. Peel and roughly chop the onion into large bits and add both to a baking tray. 
  3. Add the mixed herb seasoning, some salt and pepper and drizzle over the olive oil. Mix everything together using a spatula until the potato & onion are well coated.
  4. Put the tray on the middle shelf of the oven and roast for 25 minutes, giving everything a little toss halfway through. You want the sweet potato to be soft in the middle and a little crisp on the outside.
  5. Whilst this is roasting, rinse your kale (if needed) and put it in a bowl with the olive oil and a little salt and pepper. Using your hands, massage the oil and seasonings into the kale. This softens it and adds a little flavour to the kale.
  6. Once the potato and onion have roasted, remove them from the oven. Add your quinoa to the bowl with the kale and mix well before adding the potato & onion. Give this another mix.
  7. Time to serve, plate up your salad and top with Dr. Will’s Green Goddess Dressing and a big pinch of PUNCH your Salad. Enjoy!
