Dr. Will's x Tofoo Co: Buffalo Tofu Salad

A collaborative dish with our friends at Tofoo Co. When a salad has a naughty edge. You can add grains to this salad to make it more filling. Enjoy this Buffalo Tofu Salad with a Blue Cheese Dressing.
Ingredients:
For the Tofu:
- 1 pack Smoked Tofu by Tofoo Co.
- 5 tbsp Dr. Will's Buffalo Hot Sauce
- 2 tbsp plain flour
- 1 tbsp cornflour
- 1/2 tsp white pepper
- Pinch of salt
- Sunflower oil for deep frying
For the Salad:
- Gem lettuce, or any salad leaves of your choice
- 2-3 sticks of celery
- 1/2 avocado
For the Dressing:
- 50g blue cheese
- 50g Greek yogurt
- 1 tsp Dr. Will's Avocado Oil Mayo
- 1 tsp apple cider vinegar
Optional extras/substitutions:
- Toasted seeds for topping (adds a plant point)
- Any grains of your choice
Method:
- Starting with the tofu, combine the flours, white pepper and salt in a large bowl.
- Drain the tofu and cut it into four across the shortest edge. Then cut those slices in half to make triangles, dry with kitchen roll and add to the bowl with the seasoned flour. Toss to coat the tofu with the flour.
- Put the dressing ingredients into a blender and blitz until smooth. Add water if you prefer the dressing to be thinner.
- Fill a tall saucepan 1/3 full of oil and heat. Test the oil is hot enough by dropping a little flour in, if it creates lots of bubbles then the oil is ready. Turn the heat down low and carefully lower the Tofoo into the oil using tongs. Fry until golden, turning in the oil as needed. Once cooked, remove the tofu from the oil and place onto some dry kitchen roll to absorb any excess oil.
- Whilst the tofu is frying, prepare the salad bits. Chop up the gem lettuce, slice the avocado into chunks and chop the celery into half moon slices. Add to a dish.
- Put the tofu into a mixing bowl along with the Buffalo Hot Sauce and toss to combine.
- Add the tofu to the salad and drizzle with the dressing. Serve alongside your favourite grains if you want a more filling meal.
