Green Goddess Salad

A rapid & healthy lunch, containing 6.25 plant points - perfect in just 15 minutes!

Serves: 2 | Prep time: 15 minutes

Ingredients:

  • 80g (2 large handfuls) mixed salad leaves
  • 2 x 400g tin of chickpeas
  • 4 tsp oil
  • 200g halloumi
  • 1 x yellow pepper
  • 1 x avocado
  • 4 spring onions
  • 2 tsp honey
  • 1/2 tsp chilli flakes
  • 3 tbsp Dr. Will's Green Goddess Dressing
  • Salt & pepper, to taste

Optional extras/substitutions:

  • Toasted seeds for topping (adds a plant point!)
  • Substitute the halloumi for tofu or chicken breast

Method:

  1. Chop the halloumi into 2cm cubes.
  2. Add some oil to a frying pan on a high heat and once the oil is hot add the halloumi. Fry the halloumi, tossing occasionally.
  3. Meanwhile, drain the chickpeas in a colander and leave them to sit whilst you prep the rest of the salad.
  4. Cut the yellow pepper & avocado roughly into 1cm chunks and add them to a large bowl.
  5. Peel & slice the spring onions and chop the cherry tomatoes into quarters and add them to the same bowl.
  6. Add the chickpeas and salad leaves to the bowl and give everything a good toss. Season with salt & pepper to taste.
  7. Once the halloumi looks golden and a little crisp, turn down to a medium heat and add the chilli flakes to the pan. Toss the halloumi, so that the chilli flakes are evenly distributed through the halloumi and then add the honey. Toss again to give the halloumi a glaze and turn off the heat.
  8. Add your salad mixture to a bowl, top with the crispy glazed halloumi.
  9. Drizzle the Green Goddess Dressing over your salad and sprinkle on some toasted seeds (if using).
