INGREDIENTS (serves 4):
1 garlic clove, chopped
80g spinach
Handful fresh basil leaves
2 tbsp Dr. Will's Avocado Oil Mayo
1 tbsp tahini
150g Greek yoghurt
1 tbsp lemon juice
400g chickpeas, drained
½ cucumber, diced
150g white cabbage, shredded
50g gherkins, chopped
4 spring onions, sliced
4 pitta breads
Your preferred cooking oil or spray
Salt & pepper, to taste

METHOD:

  1. Peel and roughly chop the garlic clove.
  2. Then add the garlic to a blender with the spinach, fresh basil, Dr Will's Avocado Oil Mayo, tahini and Greek yoghurt. Blitz until just smooth then season with salt and pepper and the lemon juice.
  3. Drain the chickpeas and add them to a large bowl.
  4. Dice the cucumber and thinly shred the white cabbage. Chop the gherkins and spring onions. Add them all to the bowl and pour over the dressing, mixing well together. Adjust the seasoning to taste how you like it.
  5. Stuff the filling into your favourite sandwich bread, wraps, pitta or even into lettuce leaves for a lighter option.
  6. Then you're ready to enjoy! Keeps in the fridge for up to 3 days.
