Mexican Supergrain Bowl

Amazing for a filling lunch or healthy dinner, this bowl is packed full of hearty grains and vegetables. Topped with a buffalo mayo and buffalo candied pecans, we can guarantee you’ll be sad once you’ve finished.

Ingredients: 

For the main bowl

  • 1 pouch if Merchant Gourmet Burrito Supergrain Bowl

  • 1/2 red pepper

  • 1/2 red onion

  • ½ tsp ground cumin

  • ½ tsp smoked paprika

  • ½ avocado cut into chunks

  • Small handful lettuce

  • Small handful sliced red cabbage

  • Fresh coriander – small handful finely chopped

  • Salt & black pepper to taste

  • Extra virgin olive oil

For the buffalo mayo

  • 1/2 tbsp buffalo hot sauce

  • 1 tsp avocado oil mayo

For the buffalo candied pecans

  • Large handful of pecan halves

  • 1 tbsp buffalo

  • ½ tbsp agave / honey / maple syrup

  • ½ tsp ground cumin

Method: 

  • Preheat your fan oven to 180°C.

  • Chop the red pepper into large chunks and slice the onion into wedges.

  • Put the pepper and onion on a baking sheet. Sprinkle with ground cumin, smoked paprika, salt and pepper, then drizzle with olive oil. Toss to coat.

  • Roast the vegetables in the oven for 30 minutes.

  • While the veg roasts, make the buffalo candied pecans: in a bowl mix buffalo sauce, agave and ground cumin.

  • Add the pecans to the bowl and mix well so they’re fully coated.

  • Line a tray with baking parchment and spread the pecans out in a single layer.

  • Put the pecans in the oven and roast for 8–10 minutes, watching carefully so they don’t burn.

  • Take the pecans out of the oven and, as they cool, use a spatula to move them around a few times so they don’t stick to the paper.

  • Make the buffalo mayo by mixing the mayo ingredients together. Add more buffalo sauce if you want it spicier.

  • Prepare the other toppings: slice the avocado and get the lettuce, cabbage and coriander ready.

  • Just before serving, heat the Burrito Supergrain Pouch according to the packet instructions.

  • Put the hot grains in a bowl. Top with the roasted pepper and onion, avocado, lettuce and cabbage.

  • Add coriander, some buffalo candied pecans and a drizzle of buffalo mayo.

  • Serve and enjoy! 🌶🥗
