Seasoned with earthy cumin and sprinkled with polenta before baking, these sweet potato fries are crunchy, crispy, spicy and sweet all at once, and far healthier than the shop bought alternative.
We’re serving ours with our zingy spicy mayo for dipping.
2 sweet potatoes
2 tbsp olive oil
1 tbsp polenta
2 tsp ground cumin
Salt and pepper, to taste
Dr Will’s Spicy Mayonnaise
Heat the oven to 200°C.
Cut the sweet potato into skinny fries and put into a large bowl.
Drizzle with olive oil, and sprinkle over the polenta and ground cumin. Season well with salt and pepper, and toss the fries until they’re well coated.
Line a baking tray with parchment paper, and tip the fries on, ensuring they’re in a single layer.
Bake for 35 minutes until golden and crunchy, flipping halfway through cooking.
