Introducing the Get Real Butter Bean & Cucumber Caesar, with a tasty Dr. Will’s twist! Our quick and easy cheat’s Caesar dressing uses Dr. Will’s all-natural Olive Oil Mayo for that perfect creamy, tangy kick. Toss it with crunchy romaine lettuce, crisp cucumber, juicy cherry tomatoes, sweetcorn, and our fibre-boosting butter bean croutons. Instead of traditional bread croutons, we’re using butter beans, they’re roasted with a garlicky, cheesy topping until golden and crispy, bringing texture, flavour, and a hit of fibre to every bite. It’s the easy, feel-good way to upgrade your salad game with all-natural ingredients that are better for you. The salad works well as a standalone lunch or dinner and also as a versatile BBQ side for easy summer entertaining. If you’d like to add a meat option we recommend adding shredded chicken, you could also add some crispy bacon and even an egg on top.

INGREDIENTS (serves 4):
400g butter beans, drained
1 tsp smoked paprika
2 tsp garlic granules
80g grated Parmesan
Juice of 1 - 2 lemons
5 tbsp Dr. Will’s Olive Oil Mayo
1 tbsp worcester sauce
1
tsp Dijon mustard
½ cucumber sliced
1 romaine lettuce, chopped
4 spring onions, chopped
300g cherry tomatoes, halved
100g tinned sweetcorn, drained
Your preferred cooking oil/spray
Salt & pepper, to taste

METHOD:

  1. Preheat the oven to 200C/180C/Gas Mark 6.
  2. Drain the butter beans and pat them dry with kitchen paper.
  3. Add to a baking tray, sprinkle over the smoked paprika and garlic granules, with a generous glug of olive oil and season with salt and pepper. Toss well so the beans are fully coated.
  4. Bake in the oven for 15 minutes then take out the tray and scatter over half the grated Parmesan. Bake for another 10 - 12 minutes until golden and crispy.
  5. Meanwhile, make the dressing. Juice the lemons.
  6. In a bowl mix the Dr. Will’s Olive Oil Mayo with the lemon juice, Worcester sauce, reserved Parmesan and Dijon mustard. Mix well and season with salt & pepper. Depending on your taste preference you may like to add more lemon juice (start with half the lemon juice then adjust).
  7. Thinly slice the cucumber. Chop the romaine lettuce and spring onions. Halve the cherry tomatoes.  Drain the sweetcorn.
  8. In a large bowl, mix together the romaine lettuce and toss with half the Caesar dressing.
  9. Add the cucumber, spring onions, cherry tomatoes and sweetcorn.
  10. Finish with the butter bean croutons, drizzle over the rest of the dressing, then plate up and tuck in.
