Vegan Tomato Gnocchi

A delicious family sharing dish for all to enjoy starring our Tomato Ketchup!


1 tbsp olive oil
250g mushrooms
500g gnocchi
400g tofu, crumbled
1 tsp oregano
2 garlic cloves, chopped
1 tsp chilli flakes
1 tin chopped tomatoes
5 tbsp Tomato Ketchup
200ml vegetable stock
200g spinach


  1. Cook mushrooms in oil for 3-5 minutes and remove from pan.

  2. Add tofu to the frying pan unti cooked, add gnocchi, garlic, oregano, chilli flakes, tomatoes, tomato ketchup & vegetable stock.

  3. Bring to boil & cook for about 5 minutes. Add spinach and cook for 5 more minutes or until thickened.

  4. Mix well & season to taste.

  5. Top with mushrooms & garnish with thyme.
